最良の年の最高の葡萄で造るセレクション・アマローネ！ 　収穫した葡萄を3ヶ月ー6ヶ月もの間「陰干し」してから醸造が始まるこのワインは、非常に手間と時間と細心の注意が要求されるワインなんです。
フレンチオークのバリック（225L）で 36 ヶ月熟成させます。
濃いガーネット色。
しっかりと樽熟成されているのでビターチョコ、ドライプルーンやカシスのニュアンス。
スパイシーで少し野性的、しっかりと旨みが凝縮されていて、アタックにそのフルーツの甘味が感じられます。
タンニンはしっかりとして、アフターにはブラックペッパーのような心地の良いスパイスがあります。
赤身肉、重めのソースを絡ませた肉、香辛料を利かせたステーキ、ゴルゴンゾーラチーズ、ジビエがよく合います。
ヴァルポリチェッラの個性が発揮できているのはさすがの名手と言えるだけの味わいです。

ワイナリーはヴァルポリチェッラの北部、ガルダ湖のすぐ近くに位置しています。
「アンナベルタ」は、オーナーであるディエゴ・コッティーニの妻の名前で、「妻に捧げるワイン」という意味合いを持っています。
ヴィッラ・アンナベルタではアマローネやヴァルポリチェッラの他に、ヴァルポリチェッラのエリア外の畑の葡萄を使い、アパッシメント（陰干し）によって造るカナヤや、リパッソ製法を用いたジャイロ・ロッソというオリジナリティ溢れるワインを造っています。
コッティーニ家は、他にもいくつかのブランド名でワインをリリースしていますが、ヴィッラ・アンナベルタのワインの特徴について「インスピレーション・ワインと呼ばれていて、創造性があり、味わい、フレイバーに独自の個性が感じられます。
丸みがあり、リッチな味わいで親しみやすいのも魅力です。
アンナベルタへ捧げるワインで、家族への愛や献身、情熱を表現しました」と話してくれました。
現在はディエゴの2人の息子（長男ミケーレが醸造担当、次男マティアが輸出、販売を担当）もワイナリーに加わり、高品質でコストパフォーマンスの高いワインを生み出しています。
クオリティの高い葡萄を得るための改革！ 　葡萄畑は標高250mー850mの斜面に広がっており、すべて南向きです。
土壌は氷河によって形成されたモレーン土壌です。
ディエゴ・コッティーニがワイナリーを引き継いでから改革した点がいくつかあります。
まずは葡萄の仕立てを変えました。
それまでは伝統的なペルゴラ仕立てだったため、収量は葡萄の樹、1本当たり4kgー5kgでしたが、より高い品質を求め、ギヨー仕立てに変えました。
収量は1本当たり1.5kgと減りましたが、質のよい葡萄が得られるようになりました。
また、栽植密度も変更しました。
以前は1ha当たり3,000本でしたが、1ha当たり7,000本にしました。
これにより葡萄の根の土中での競争が激しくなり、葡萄は養分を得るために地中深く根を伸ばすようになります。
これらの変革は全て、品質の高い葡萄を得るために行っています。
ディエゴは、「畑作業は仕事ではなく楽しみ。
良いワインが出来ることへの喜びに繋がる」と話します。
この姿勢が妥協のないワイン造りにしっかりと反映されており、どのクラスのワインも素晴らしいクオリティが保たれています。
徹底的な選別作業が品質の鍵！ 　ヴィッラ・アンナベルタでは、葡萄の選別を非常に重視しています。
アマローネやカナヤなどのアパッシメント（陰干し）を行う葡萄については、熟練した摘み手がいくつものチェック項目を確認しながら手作業で収穫を行います。
その後、収穫した葡萄はセラーに運びこまれ、もう一度選別作業が始まります。
アパッシメントは、フルッタイオと呼ばれる葡萄の乾燥室で行いますが、温風を当てて乾かすわけではなく、箱に入れて、数ヶ月もの時間をかけて、自然乾燥するのをじっと待たなければなりません。
そのため、少しでも傷や腐敗のある葡萄が混ざっていると、その数ヶ月の間に葡萄は駄目になるばかりか、同じ箱の健全な葡萄の状態まで悪くしてしまいます。
そのため、アマローネには収穫した葡萄の20ー30％しか使用しないそうです。
さらに、アパッシメントによって葡萄の水分が減るため、出来上がるワインはさらに少なくなります。
しかし、ディエゴは「悪い商品を造るくらいなら、ワインは造らない」と語り、徹底的とも思えるほどの品質管理を行います。
陰干し（アパッシメント）した葡萄は、プレスする前に不純物を取り除くため、しっかりと洗浄するのもこだわりです。
これによって、葡萄の持つピュアな味わいをさらに表現できると考えています。
発酵・熟成容器の多様性によって、理想の味わいへの選択肢が多くなる！ 　様々なサイズの異なるタンクを使用しています。
なかでも小型のステンレスタンクを多く使用していることについて、「自分達の理想の味わいにブレンドできる選択肢がたくさんあるということ」とディエゴは話してくれました。
また、この小型のものは、全てオフィスで温度管理をすることができ、最新の情報が一目でわかるようになっています。
　熟成に使用する樽は3種類で、バリック、トノー（500L）、ティーニ（大樽・150hL）です。
焼き加減はライトーミディアムトーストで樽の個性が強くなりすぎないようにしています。
アマローネは基本的にバリックで、ヴァルポリチェッラやI.G.P.ワインは、大樽とトノーで熟成させています。
清潔に保たれた熟成用セラー！ 　ワインの樽熟成には適度な湿度が必要ですが、湿度が高ければカビが繁殖するリスクが生じます。
ヴィッラ・アンナベルタのセラーは、隅々まで徹底的に清掃が行き届いており、まさに「塵一つ無い」完璧な環境を保つことでリスクを抑えています。
また、空気交換を行って常に清潔な環境を保ちます。
気温は13ー14度に保たれており、夏場でも18度を超えることはありません。
また、最新の湿度管理用システムを導入しています。
理想的な湿度（75ー78％）を保つために湿度を感知するセンサーがついており、湿度が低くなると自動で銀色の壁部分に水が流れ、湿度を上げるという最新のシステムを導入しています。
また、ボトルの洗浄や殺菌に使うスチームや熱湯は、葡萄の枝を燃やすことで得たエネルギーを利用するなど、ワイナリーとしてサステイナブルな動きを心掛けています。
葡萄やワインの品質管理だけではなく、こうした点でも妥協がないのがディエゴらしいこだわりだと言えます ＜評価＞ 　「ディエゴ・コッティーニはヴァルポリチェッラとそのワインに密接に結びついてきたが、瓶詰を始めてからはまだ 20年も経っていない。
ブドウ畑は今や 150ヘクタールを超え、特にヴァルポリチェッラ東部にある。
